Probably one of the most famous sausages associated with Franconian cuisine is the Nuremberg Bratwurst. But that is far from the end of the story. Franconian bratwurst cuisine is definitely more varied than one often assumes. Depending on the region, Nuremberg sausages are prepared in different sizes and with different spices. The absolute classic is the large Nuremberg bratwurst with marjoram. The delicious sausages are usually prepared on the grill or in a pan. They are either served in a classic bun with a little mustard or horseradish, or eaten with sauerkraut.

Meat dishes from Franconia
As is so often the case in German cuisine, Franconian cuisine consists mainly of meat specialties. Most of the dishes are from pork. Probably the most popular specialty is Schäufele. These are baked pork shoulders served with a crispy rind cut into a diamond shape. Of course, Franconian pork shank is also a must on the menu at Backöfele. The hearty speciality is served in a dark beer sauce and with potato dumplings and sauerkraut as a side dish - simply delicious. Equally popular is the classic roast pork with crust. Similar to neighboring Bavaria, it is served with either a dumpling, sauerkraut, blue cabbage or savoy cabbage.

A terrifically delicious dessert, which really always fits, are Franconian Küchle. Also known as undressed doughnut, in Franconia is called sweet yeast dough pastry fried in fat and is considered a typical specialty Depending on the preparation Küchle can be prepared rectangular, square or even round. They have a light crust and are deliciously doughy inside. Baked golden brown, they can be sprinkled with a little powdered sugar or enjoyed with applesauce and fresh compote. As you would expect, the Backöfele will also provide you with delicious freshly baked Küchle. We serve apple pancakes with cinnamon and sugar, vanilla ice cream and whipped cream. Aischgrund is located between Forchheim and Bad Windsheim. This is the home of the Aischgründer mirror carp. That is why it has always been part of Franconian cuisine and is served up in a variety of ways. If you order a carp "blue", you will receive a carp baked in a vinegar or beer brew and cut in two. Another well-tried specialty from Franconia is "Ingreisch". These are the baked out genitals of the carp. Our restaurant in Würzburg does not serve carp, but Franconian river pike perch. This is served under a delicious herbed potato crust with crayfish sauce and Vichy carrots.
